Easy Muffins for Under Six Dollars.


These muffins are easy to make and cook and are useful when you have some leftover fruit or something you want to use. Play around with different combinations of extra ingredients to find your own special flavour.

Ingredients;

2 cups self raising flour.
1/2 cup sugar (or 2-3 tablespoons of honey for sugar free).
1 beaten egg.
1/4 cup cooking oil.
1 cup milk (or 1/2 cup milk 1/2 cup cream)
Your chosen added ingredients (fruit, spices, nuts, maple syrup etc).

Method;

Wash your hands, put on a hair net or clean hat, use gloves where handling food if appropriate.
Preheat oven to 180C.
Beat the egg.
Mix egg with all other ingredients in a large bowl.
Mix until just combined, do not mix too well.
Shape into about 12 balls and place in a greased muffin tin.
Bake for 20mins @ 180C or until cooked.
Eat warm or let cool on a cake rack.

Makes 10-15 depending on how big you shape them and how many extra ingredients you add.

Self raising flour - (1kg packet - 75c / 7.5 cups per 1kg / 10c per 1 cup = 20c)
Sugar -  (1kg packet - $1 / 5 cups per 1kg - 20c per cup = 30c)
Eggs (free range) - (12pack - $4 / 33c per egg = 33c)
Cooking oil - (1ltr bottle - $7 / 4.2 cups in 1ltr / 1 cup = $1.60 )
Milk - (2ltr carton - $2 / 8 cups per 2ltr / 1 cup = 25c)
Cream (600ml tub - $2.60 / 2.25 cups per 600ml / $1.15)
Extra Ingredients - fruit (Reduced to clear pack of bananas $2)

Total - $5.83 or 49c ea based on making 12.
