Meatloaf with Honey Carrots and Mashed Potato For Under Ten Dollars.

(Serves four)




Equipment;

3 saucepans
1 large oven tray or oven proof dish
potato masher or large spoon
Strainer
Knife and chopping board

Ingredients;

1/2 onion
2 to 3 cloves of garlic
800g mince (400g beef / 400g pork)
4-5 eggs
herbs for flavour (optional)*
leftovers (sausages/rissoles/roast vegetables) (optional)*
salt and pepper

4-5 carrots
teaspoon of honey
4-5 potatoes
10-25g butter or margarine
50-100ml milk
water/salt/pepper/oil/oil spray for cooking



Method (Meatloaf);

Wash your hands, put on a hair net or clean hat of some kind. Use gloves when handling food where applicable.

Set oven to 180C to preheat.

Fill two saucepans with water one each for the carrots and potatoes, bring to boil. Place peeled and sliced vegetables into saucepans and bring to the boil again, reduce to a medium simmer and add a tablespoon of honey to the carrots.

Place eggs in another saucepan, cover with cold water and bring to the boil. Let boil for no more than two minutes, take off heat and place lid on saucepan. Leave aside covered for exactly 10 minutes, remove lid and rinse in cold water, dry and put aside.


Chop onion, garlic, optional herbs and leftovers, add to mince in a large bowl. Add a pinch of salt and pepper and mix well. Brush oven tray with oil or oil spray. Place 2/3 of the meat mix on oven tray and make a small trench in the middle.


Line eggs along trench end to end, leave a small gap at each end to fold the meat over.

From the bottom, gently squeeze meat until the sides are formed, you may need to turn the tray around a few times to do both sides.

Use the remaining meat mixture to completely enclose the top, you don't want any egg to be showing and the meatloaf to hold itself together, it's important to shape it slowly and gently to ensure it doesn't fall apart.


Cover top with BBQ or tomato sauce (or both) and let run down sides. Spray oil lightly over meatloaf. Bake @ 180C for 45mins to 1 hour. Check after thirty minutes and carefully spoon or drain any moisture from oven tray.



Method (Mashed potato);

Cook potatoes just past soft (should be starting to break up), remove from heat and drain.

Add 10-25g butter (or more depending on taste) to the saucepan and place drained potatoes back in, add pinch of salt and pepper, a dash or two of milk and mix with potato masher or large spoon until smooth and creamy (add more milk to make it creamier).






Method (Honey Carrots);

Drain carrots and return to saucepan, add 5-10g butter, salt and pepper to taste.

Adding the honey to the water while the carrots are cooking gives a nice subtle honey flavour. If you want the flavour stronger add another teaspoon of honey with the butter, salt and pepper and mix well.






Serve plain or with sauce or gravy of your choice, I used sweet chilli sauce.

Can be frozen if egg is removed first.
